WARM BRISKET
SANDWICH
Reheat the meat in
a little of the gravy.
Cut two thick slices
of bread. Dip one
slice in the gravy and
place wet-side up
on a plate. Top with
meat and a dollop of
horseradish sauce.
Use the remaining
slice to wipe out the
gravy dish and sit the
sopping slice wet-side
down on top of the

cup soy sauce

1. Preheat oven to 325°F. Slice onions and arrange
in center of a roasting pan that will hold the brisket
snugly. Place brisket on top, fat side up.

. Whisk together the remaining ingredients; pour
over brisket. Cover pan with heavy aluminum foil,
sealing it tightly Bake

hours or until tender,
3* Remove from oven; transfer meat to a cutting
board and cover with foil.
4. Transfer onions to a blender with a ladle or two
of liquid from the pan. Blend until smooth; stir back
into remaining liquid in pan.
5, Slice brisket across the grain and then, if desired,
cut the slices in half. Place slices in gravy in the
pan. Store leftovers in a covered container in the
refrigerator up to

days, or freeze up to

months.
Reheat meat in the gravy in a 35Q°F oven in a pan
covered with foil. Or microwave, covered, 30 seconds
at a time until hot. Makes
